Rained Out

our Girl's Weekend was still a blast!

and in the spirit of sharing caloric bliss....
here's a must have recipe for everyone who loves peanut butter & chocolate:


Peanut Butter Chocolate Eclair No Bake Cake 
  
1 Box Chocolate Graham Crackers
2 - 3.25 oz. boxes vanilla instant pudding
1 cup creamy peanut butter
3.25 cups milk
1 - 8 oz. container Cool Whip
1 can chocolate frosting

Spray bottom of 9x13 pan with cooking spray.
Line the bottom of the pan with whole graham crackers.
In a bowl using electric mixer, mix pudding with milk and peanut butter ~ beat at medium speed for 2 min.
Fold in Cool Whip.
Pour half the pudding mixture over the graham crackers.
Place another layer of whole graham crackers on top of pudding layer.
Pour over remaining half pudding mixture and cover with another layer of graham crackers.
Heat the container of prepared frosting, uncovered for 1 minute, pour over top of cake.
Refrigerated for at least 12 hours before serving.

(Side Note:  We, silly girls, forgot to fold in the whipped cream, but it still turned out to die for.  
     So, when either of us make it again, we will try it with the Cool Whip but probably use only half the container. 
Without the Cool Whip the peanut butter mixture was thicker, but still very creamy, and intensely flavorful!) 

 * you'll be licking your fingers raw ~ consider yourself warned! *

  2. I had a girl's weekend similiar to yours where it rained almost the entire time....but we still had fun. That dessert sounds fatal.

  6. I think the three stooges are super cute and I know they had fun together...kinda like a dogie weekend....I am sorry it rained but it sounds like you two made the most of it and had fun anyway.........the no bake cake sounds yummy.....
